Yes, that’s possible!
Please check on the form’s edit screen in the Email Notifications tab – when you set up notifications, you can add those details on the Advanced tab. If you click the (+) button, you will be able to select fields from the form to automatically add placeholders which will be substituted by values of the fields.
Just heads up – please test first before making this live. Not all email providers allow setting custom From headers and they may sometimes revert those to the default ones – this is a precaution due to the abuse by spammers who often try to change the headers to fake the sender’s name.

I did that and the from still just shows up as From: abc@domain.com <abc@domain.com>

It seems that there is some misunderstanding here and you mean you would like to set up “From Email”, which is set up correctly in this case. Please note some hosts do not allow “from email” to be overridden or replaced due to spam issues.
To do that you will need an SMTP plugin that will overwrite those settings:
