In my product the variation that is at 0 does not disappear until I select optio

In the product that I attach when you select (it is a plugin of variation switches) it shows you those that have stock, those that don’t it hides them but in this and in another similar one, it shows the two options and when you click on it the empty one disappears.

Can you please share what variation swatches plugin are you referring to here so that we could point you in the right direction?

By any chance, if you are referring to the premium plugin Variation Swatches and Photos, and you have a valid license with us, can you please open a support request for us to investigate further about your issue?
