You would have to drag the title element into the title field in the import template. You can learn more about how to use WP All Import here: https://www.wpallimport.com/documentation/importing-an-xml-or-csv-file/.
Alternatively, if you export the data with WP All Export instead, you can upload the export “Bundle” zip file to a new import and the settings will be filled in for you.

The categories and tags will be imported as new items in the new site, so it’s extremely unlikely that the IDs will match the old site. You can try forcing the IDs to stay the same with a workaround like this: https://www.wpallimport.com/documentation/code-snippets/#keep-old-ids-when-migrating-categories-and-other-taxonomy-terms, but the only way to be certain that the IDs remain the same is to do a complete database migration.
