I have tons of images in my blog posts, but generated sitemaps always show 2.

Does it mean search engines doesn’t know about all the images there?
    How to resolve?

Yoast SEO only detects the images that have been added to the default WordPress content editor or via a page builder compatible with our plugin such as WP Bakery. Images added through custom fields or theme boxes appearing on other areas of your page like the header or the footer won’t be detected by our plugin and, consequently, won’t be included in the XML sitemap.

While our plugin isn’t able to detect all your images, this doesn’t mean that search engines won’t be able to parse them. Google can still discover your images even though they’re not included in the XML sitemap.

I hope this clarifies your concern.
