I recall when using an IMAGE post for Facebook, it used to display the link with the large image. Now it just posts the title, picture but no link. Was this something that changed with SNAP or something Facebook did?

Sorry, but you recalling it wrong.

“Image” post by definition has no links. “Image post uploads” image that linked to a bigger image. What you describing is a “Shared Link” post type.
