• Every time it auto-saved, it altered the code I was trying to post on my blog and made the syntax invalid. What on earth were the developers thinking not only by making this default, but not having a built-in way to disable it?

The Classic Editor plugin (& several alternatives) allows you to quickly & easily disable the Block/Gutenberg editor on a per site/post/page/user/.. basis.

Yes, I found one. Would have been nice if I didn’t have to Google for plugins to fix a problem they’ve known about for months though.

Gutenberg added one extra step in development process. Installing disable Gutenberg by installing classic editor.

Classic editor does not change the code filtering. You have to install one of the plugins to disable Gutenberg entirely. FYI.
