    I have downloaded some themes, such as "notebook" and a few others and notice that they dont have all the files that some other themes do (like the default for example). My question is;

    When installing these themes, what does wordpress use as the archive.php, & single.php files if they dont exist in the theme? Does it use the default files?

    I think this article will help explain the hierarchy of template pages: http://codex.wordpress.org/Template_Hierarchy

    Hmm.

    I dont quite get what that means in regards to the files that are missing.

    What happens when the files are less than regular default files? The link doesnt state that

    If a theme has no "archive.php" file, then WordPress uses the "index.php" file to display archival material.

    If a theme has no "single.php" file, then WordPress uses the "index.php" file to display the single entry material.
