Hello, for a short period of time, 503 code is perfect. It should not harm any SEO score, but leaving it longer than few days is bad.

Well if the site is down overnight for maintenance, is it an idea to serve the other “Coming Soon 200 HTTP OK response page”?

“Coming Soon 200 HTTP OK response page” is meant to use for a long term outage, or in a pre-build stage, because search engine will crawl this page and index it – you dont won’t that.
If maintenance is overnight, still use 503 meaintenance mode, it says to crawl engines “we are down, but URL is still in use, please come back again later to check it”.

OK lastly, for our staging site which is an exact copy of our live site (we really do not want any bots crawling any of the pages) can we use your plugin with the 503 maintenance mode to block all bots?
Or is it best not to use your maintenance page and just use the WordPress “Do not encourage search engines” setting? My problem with that is some bots might still ignore that.

You can use both, 503 with “Search Engine Visibility” checked under CMP Settings > SEO.
But exactly, it is up to search bots to honor this. Best way to block staging site is to block it with password with your web server.
