Hi,
I see the issue. Would you be willing to take screenshots of all the settings in the backend of the plugin so I can try and replicate it? It shouldn’t be doing this.
I’ve tried with both a category and custom text. Both work fine with gap.

I’m terribly sorry for the late response!
If you check out the following URL:

You will notice it appears to be working fine, I’ve mimicked your exact settings on both the shortcode and the backend. I have a theory that a plugin/script from your theme on the site having issues is the culprit. Could you do me one of two things to try and confirm if this is true?
#1 if you could test this on the other site that is not having issues and let me know if the issue is present or not.
#2 if you can get your hands on a fresh install of WordPress, install the plugin, and confirm if it works properly. (this is essentially what is set up on the link I provided)
If you can do either or even both and let me know the outcome we can try and get to the bottom of this!

Hi!
Thank you for the investigations. I should have responded sooner with how I fixed the issue. It appears that the way I inserted it into my header as part of the topbar within my theme was the issue. When I took it out of the topbar and instead used the settings to have it as a banner on all pages (therefore making it as its own topbar) that seemed to do the trick.
