when subscribing (“Double Opt In Mail Content (Confirmation Email)” and “Subscriber Welcome Email Content”), it seems that email is sent in plain text
Email will be sent based on email type in Email Subscribers -> Email Settings -> Mail Type
when i send a newsletter, the footer with unsubscribe message (“Unsubscribe Text in Email”) i do have to put <br /> in order to go to the line?
No, you don’t have to <br> tag.
i cannot add a specific <font> to the newsletter (it is removed when i save it)

Hello, if i do not add the <br> tag in the unsubscribe message (“Unsubscribe Text in Email”) there are no break lines. I click on “view the html” in outlook :

Have a check in other mail client providers (gmail, yahoo) and check their behaviour.
