Tax classes aren’t a new feature from the plugin, and the plugin doesn’t add any new handling for them (it doesn’t need to) – they’re a core part of WooCommerce, which has a full set of features for that. See here: https://docs.woocommerce.com/document/setting-up-taxes-in-woocommerce/

i know how to setup tax class on woo i need to know if i need in your plugin add manually
the value on related eu country the vat % relative to specif good.
if for example in italy cheese is a particular vat of 10%
suppose i create a test rates in woo and i go in the menu where in the footer i can add using your plugin the std or reduced tax, after that i have imported i suppose that i will to change country by country to relative vat about that product category for example cheese right?
I’m not entirely clear on the question you’re asking… are you asking about the “add digital VAT rates” button? You don’t want to press that for non-digital goods. It adds an entry for every country. That is only relevant for digital goods that have different VAT for each buyer’s country.

Yes, that’s the one I meant. It’s for adding per-country digital VAT rates. Don’t use it if you’re not selling goods that are under that regime. It’s just a convenience feature for quickly adding 28 different rates at once. But if you’re selling cheese, there’s only one rate, so you should just add your rates in the normal way.

No, if it’s not digital goods, then it’s not under the variable-VAT regime; you should be charging just the Italian rate to all customers.
However – it is best to ask questions like “what rate should I charge?” to your accountant. I am neither an accountant nor a lawyer. My knowledge of EU VAT law is not comprehensive, and comes with no guarantees. Every shop owner should consult with a local authority to know the correct VAT to charge on their goods.
