On the Photo ALbums -> Album Admin -> Edit -> Manage Photos – Edit photo information admin screen, on each photo admin box, just below the Description field there is a Tags input box where you can enter tags separated by commas (,) and there is a selectionbox that contains all the photo tags that exist in the system (if any)
The same mechanism is there for albums, but they are called Categories to avoid confusion.

Jacob, thank you for the rapid reply.
OK, got it. Thanks to your explanation I now know how to tag individual photos. However, my problem is that I have thousands of photos to tag. Is there any way to put a tag (identifying the photographer) on multiple photos when importing them?
You can have album specific default tags.
So if they are sorted in photographer specific albums, you can use this. Moving photos to a different album will not remove them.
Not sure I understand. Will experiment a bit and ask again if necessary.
See the Edit ALbum Information screen:
Default photo tags: Enter the tags that you want to be assigned to new photos in this album.
