Yoast does not have a feature that automatically removes translated WPML languages from the sitemap. We suggest two actions:
1. When you translate the page add a noindex tag to it. This will pull the URL off of the sitemap. This guide explains more: https://yoast.com/help/how-do-i-noindex-urls/#single.
Note when you do this be sure to check the primary page as well to make sure it also has the right tags.
2. Consider developing on the plugin to force Yoast to automatically remove URLs from the sitemap (or apply a noindex tag each time you do a translation). You may need to review our developer documentation here https://developer.yoast.com/features/seo-tags/meta-robots/overview/.
Unfortunately, there’s a difference between the support we can offer and the level of programming needed to change (core) features of our plugin. Since we don’t want to take the risk that we break your website by suggesting incorrect or incomplete code, we cannot advise you on how to make such changes. And even though we cannot be of any assistance, you’re completely free to change anything in the plugin to better suit your needs.

We understand your concern and frustration when seeing the documentation isn’t ready. However, we have another page here https://developer.yoast.com/customization/apis/metadata-api/#generic-presenters that lists all the available filters including the wpseo_robots
that you’ll mostly need here to set noindex
or something else to exclude certain pages from the sitemap.
In addition, you may find the guide https://developer.yoast.com/features/xml-sitemaps/api/#exclude-specific-posts here helpful as well that comes with a few example code snippet to exclude certain items from the sitemap.
