How to exclude categories posts?

I was able to exclude certain categories through Form Elements check box by selecting “Individual” however, on the website after I select some check boxes then unselect every check box on my site (URL becomes /#sf-{“search-id”:”Cool Stuff”}), the results show EVERY post.

Is there a way that I can exclude certain categories from showing up on these results?
