Hi,
If the plugin is currently installed on your site then you would need to go to General Settings menu of the plugin and then choose “Enable” option for “Remove Database at Uninstall” and click on “Save Changes” button.
After that deactivate and delete the plugin. This will delete all the existing data of plugin from your site.
If you have already deleted the plugin from your site then you need to delete the plugin’s tables from the database directly.
You need to delete the following tables:
mail_bank, mail_bank_licensing, mail_bank_logs, mail_bank_meta

I have deleted it before but another method would be for me to install it again and in the case of a multisite network install, I would network activated it again and then go to settings (from the super admin setting area) and Enable the Remove Database at Uninstall option and save changes right?
Then disable and remove the plugin?
Doing this would remove all tables from all subsites and primary site correct?

As you said that you have already deleted the plugin from your site then you need to delete the plugin’s tables from the database directly.
