After you changed you image sizes and crop setting, did you regenerate your thumbnails:

Thanks, I installed the Regenerate Thumbnails plugin and I regnerated the thumbnails for these particular images, but it still doesn’t work… I tried deleting the images, uploading them again, finally regenerating thumbnails again, to no avail.
Weird… Do I have to regenerate thumbnails for all images, even those which are not inserted in products?

You don’t have to regenerate thumbnails for images which are not used for products.
Perhaps the image appearance is being dictated by your theme’s style sheet. Can you post a link to a page showing a cropped image which shouldn’t be cropped, so it can be examined with browser tools.
At Admin page > WooCommerce > Settings > Products tab: Single Product Image – do you have “hard crop” checked or not checked?
I tried it both checked and unchecked, and it still doesn’t work…
I think that box should be off.
Also, at Admin page > Appearance > Theme Options > Shop Settings: “Enable Product Image Crop on product Page” should be off. If it isn’t, turn it off and regenerate thumbnails again.

Weird… I wonder why they give so much importance to the option of your product images being deliberately cropped (so much, that it is actually the default option). Why should one want that?
