What plugin are you using to manage the additional roles?
I’m using Jetpack 7.7.1:
* The Site Stats page shows the [Configure] link.
* This opens a page showing the [Expand to update settings for how visits are counted and manage who can view this information.] link.
* This opens a panel containing a list of roles with the title “Count logged in page views from”.
* Currently Subscriber is switched on, but switching on other roles shows the “Updated settings.” popup. However, it doesn’t stick, and only Subscriber is switched on when I next open this panel.
No, I mean what plugin are you using to create and manage the “Employee” and “Student” roles?

Sorry, I misunderstood your question.
Employer comes from WP Job Manager.
Student comes from Namaste! LMS.
Counts from the Employer role have been picked up very recently, but over last weekend a member with the Employer role posted a new job, but their page views were not collected.
Would you please give us a link to that listing?
No, I mean the URL of the listing you’re referring to, not your stats. π
FYI, since 07:41 on 12Sep2019 (UK time) views from blog members logged in as Employer are being counted again.
