On your sidebar use the template tag, wp_list_categories(), and the exclude=x argument (where x is your category id you want to exclude).
Sorry , i should have mentioned, i have no idea what i’m doing!
1.Figure out the ID for that category. Assume for now that is 7.
2.Edit your theme’s sidebar and where it has code similar to:
<?php wp_list_categories('show_count=1&title_li=<h2>Categories</h2>'); ?>
Change to
<?php wp_list_categories('exclude=7$show_count=1&title_li=<h2>Categories</h2>'); ?>

So are you wanting to exclude a category site wide? A global exclude? Would that be accurate, or just exclude it from a category list (per suggestions above) ?
