What about using CSS to hide the subtotal in the Cart and Checkout page? {display: none;} should do the job. You’d want to target the correct selector though. If you’re interested in learning CSS we highly recommend using the free tutorials at w3schools.

For emails you may want to use hooks instead. The PHP snippet in the article shared by Juan should work for emails, but you can also look at this one and add a single-line comment to this line to show totals.
