As a guess, and to do so cleanly, you would extend the WP_Users_List_Table class to replace the single_row() method to one that essentially suppresses the row when the admin user is encountered. You probably would want an exception to list yourself if you are the current user.
To completely hide, you would also need to alter the user count display and who knows what else.
