The issue could be related to paging settings. As a preliminary step, could you also try setting the pagination type to none in the gallerysetting->paging of your galleries as shown in the screenshot at https://monosnap.com/file/P3wZ7F36Nss79ccBNI8Fy3ua5lhuSJ

As you can see, they randomly display 5, 4 and 8 images. I’ve already set the pagination type to none – but it doesn’t work. A few months ago, it all worked fine…

That’s odd. Have you also tried clearing your gallery cache? To troubleshoot the issue, try clearing your gallery cache when you go to wordpressadmin->foogallery->settings, navigate to the general settings and clear gallery HTML cache and CSS optimisation cache. Try also disabling any cache plugins you have installed or the CSS and JS optimisation features in the cache plugins then test to check if the issue is fixed.
