Have quantity in cart menu only

I wondered if there’s a way to switch off the cart stock reducer function but keep the “quantity in carts” column/ menu from the wp-admin products page? We find it really helpful to see what items are in carts but sometimes we need the cart stock reducer function off and we don’t want the stock expiring from the cart in those cases either.
