It’s quite strange — HappyForms sends data as soon as submissions take place, at which point everything depends on the email system active on your WordPress installation.
From the sounds of it, emails were sent immediately, but remained “blocked” somewhere along the road, most likely on your email server, or the email server of your customer. Out of curiosity, are you running an SMTP plugin, or a 3rd party email service plugin?

I’m using the plugin on my cpanel server, I have 20 or so accounts using this plugin “as is” (nothing extra installed to help it send mail) so, SMTP by wordpress via cpanels regular email system? is as best as I can answer.
Notes:
– Other accounts are sending email forms out – including hers during this time, just not ALL of them (to her, but now I am now sure?, is the plugin or my system holding emails for others??)
– Can you suggest a way for me to start troubleshooting this? A place for me to look in your plugin configuration or in mine? I am happy to provide you with temporary wp credentials if you are inclined.

In the meantime, have you reached out to your webhost about this? They typically aren’t that helpful, but it’s worth a shot. They may have some ideas.
