The pages on my site are taking the h1 header from my page title tag.
    Here's an example: http://sydneyhousesitter.com.au/contact-us/
    The theme is More+ .

Any idea how to change this?

I don't know the theme yet have experienced an issue like this before.

Try taking a close look at page default settings things like; turn off 'breadcrumbs', take auto page title off, search for site defaults related to page layout. What about the default 'help' supplied with the theme?

Hint- have two browser tabs open- one with a static view of your site as is now. The other use it to refresh after each change you make to page default settings, that way you can closely compare the effect of a change. Make a close note of each change before you do it!

May sound basic but in the past I have found this the best way to experiment with page/ theme layout effects and makes you understand the theme better. Hope this helps.

It looks like it's related to how the theme works. Can you contact the theme author? As appleisle says, you could also look for any options within the theme or settings that sound related. Could be it's something you can check on or off.
