    Where is the option to change what font you would like – I see an option to change the size from normal to medium to large etc, and an option to change background and font colour but no option to select a font?! How do I get this?

  • Picking a font is not part of the editor. The theme determines the font, and usually has an option for that in the Customizer, for the entire site since fonts must be loaded and specified with CSS.
    The editor needs to stay neutral, to work with all themes. There are plugins that enable fonts, however.

    It really depends on the block you are using. Sometimes there is a block beside the normal medium and large you can type a font size into. Other blocks may not have an option at all to change the font size. Blocks can be authored like themes. So if the person who developed the block didn’t include font size as an option you will have to do it with css. If you want to do it with css under the advanced function there a place where you can type a class name. You can then use the class name in custom css to modify the block.
