You mentioned, “… with the options in the editor activated, …. the “Save” button is always on. I need more information on which option from the editor you are referring to that you have activated.
Please provide us with screenshots that highlight the issue you are experiencing. I mean the one and only “Save” button in the Gutenberg editor for posts and pages in the top right corner (I suppose no image is needed here). This button is usually deactivated when I access a post or page; only when I make changes it is active indicating that I need to save my changes. Since I have installed Yoast SEO, it is always active, which is not helpful because it may lead to saving to often and producing unneccessary revisions.

What you described is unconnected to Yoast SEO; it’s the new design of that button by WordPress. It’s a mere coincidence that you noticed that behaviour after installing our plugin. I took this screenshot immediately I opened up an existing post and didn’t make any changes, so there’s nothing to Save, really. Also, Yoast SEO is not active on that site.
In summary, the issue isn’t Yoast SEO. If you are bothered about unnecessary revisions, you can set a limit: https://wordpress.org/documentation/article/revisions/
