Hi,
The address fields (locality, region, post code) should be added automatically if you configure your Google Maps key properly. Note that they won’t apply retroactively, however, if you just add the key now; it will only work for future job listings. It also depends on you including a proper full address for the listing. See this page for how to set things up, including the Google Maps API key:

employment type

Note that those types *should* be there by default already, so you generally will only need to assign one of those types when creating a job listing; you shouldn’t need to do so after the fact, if you add listings from the front-end of your site.
