Getting Two-Column Layout Widths Right

All I’m trying to achieve here is a simple two column post layout that allows the content column to display my default image width of 700px and a sidebar that shows post categories.

I have managed via Custom CSS to end up with a 100% full page layout which is okay for the content column but leaves me with an excessively wide sidebar column that looks wrong. It appears around 40%/60%.

I either need a full width solution that allows me to change the sidebar/content % or, preferably, a means to define a centered two-column width solution that allows me to define width in pixels ….. eg: 300px/700px.

Have tried many Custom CSS ideas on here but none are changing the sidebar width.
