i guess i could write a script that would count the user ids, find the highest number, and $user_id = $blah
but that might be reinventing the wheel

If you want to show more then 1, then just change
FROM $wpdb->users ORDER BY ID DESC LIMIT 1");
to
FROM $wpdb->users ORDER BY ID DESC LIMIT 6");
Rather than using a custom SQL query, you could do:
$newest_user = get_users( 'blog_id=1&orderby=registered&order=DESC&number=1' );
