 * If I use this plugin to create custom post types etc, vs doing it myself, what
   would happen to the data if the plugin is accidentally uninstalled or de-activated?

 * Absolutely nothing, everything will remain saved in the database.
 * We do not remove any data from the database on plugin uninstall/deactivation.
 * If you deactivate WCK the post types, custom fields (metaboxes) etc. just won’t
   show up anymore in the admin UI, but the existing data will all be available 
   in the db.
