An anonymous functions sounds good. Please keep in mind that this is PHP 5.3+.
Not an issue for me but WP still stubbornly supports PHP 5.2

Please note that the recommended PHP version for WooCommerce is PHP7.

In WooCommerce 3.4 the recommended PHP version will be bumped to PHP7.2

Function create_function() is deprecated in PHP7.2 hence the issue is active on githum.

Correct but even WooCommerce still supports 5.2 (even though they don’t recommend it).
WordPress also recommends 7.x but still maintains support for 5.2. There is a whole discussion going with developers voting to fully drop support for 5.2 in WP core.
Again, doesn’t matter to me as I’m running 7.x for all my clients and I think for nearly all users a minimum of 5.3 is fine.

Sure – the error reported on this thread only occurs with 7.2 and is being addressed on the github ticket mentioned, please follow there if you would like to contribute
