If you’re using Gmail SMTP, you can’t change “From Email” address (this is Gmail’s policy). However, you can have “Reply-To” and “From Name” fields populated by Gravity Forms. So when you get a form submission, you click “Reply” in your email client and email address of the form submitter will be automatically set in “To” field.
For that, you just need to make sure “Force From Name Replacement” is unset in Easy WP SMTP settings.
I am not using Gmail SMTP. The plugin is EASY WP SMTP (I have tried a couple with similar results) pointing to our local Exchange server. I have also done the above but it still fills in my account setting for the connection to the server. Any additional ideas? Thanks.
Looks like I got your initial posting wrong.
What you’re saying is that Easy WP SMTP won’t let you change some values in its settings?
There are only a couple of settings in Easy WP SMTP, which I can set, and one of them should allow for a form to overwrite the default settings for from name, from email, and reply-to with fields being populated from a form (in this case a Gravity Form) but it is not and retaining the default values.

I’m trying the same, because i have lots of forms and each one need it’s own emails address.
Simple answer is no. It appears that the way it is relaying through our Exchange server it continually replaces with the authenticating account. As a bit of a work around I have just begun including the relevant name field(s) from the form into the subject of the email. Not a perfect solution but is temporarily at least helping.
