 * Can I have a field or several fields which are only viewable and accessible to
   wordpress users of a defined role such as editor or author, or perhaps for a 
   role a create myself.
 * For subscribers this field would not be seen and cannot be used.

 * You can use a custom template that can show a different set of fields for different
   roles. I have a tutorial that shows the basic idea, you will need to adapt it
   to change the shortcode based on the user role.
