Featured/Summarized posts on separate pages

I have a site http://www.contrastcontrol.net that is about my work as a music journalist. I am creating a specific section dedicated to my work as a story writer and poet as well. http://contrastcontrol.net/my-writings/

I would love for the posts i add to that section to show up as posts instead of the entire content of them being shown.

If i use the blog template setting in my page settings it adds things that aren’t in the category which drives me crazy and seems very unorganized when it does so. Can anyone help? And i’m sorry if i wasn’t to descriptive this is a toughie to explain for me.

I use the latest wordpress and posts to page plugin to senda specific category to that section as well.
