The plugin registers the featured image size for you already. You need to select it as the size to display in the widget settings.
If your images were uploaded prior to the plugin, the thumbnail sizes for the plugin were not generated so you need to regenerate thumbnails. Install and run this plguin to generate thumbnails for the new featured image size: https://wordpress.org/plugins/regenerate-thumbnails/

I have selected the thumbnail size of 150×150, the other choices are:
Featured Post: 530×300
Agent Profile: 150×200
Full Listing:1060×9999
Listings:560×380
Choose the Listings thumbnails size (560×380).
That did not work Look at the site if you can.

I did take a look. The image your using is the 150×150 thumbnail. Use the Listings thumbnails size (560×380). Please keep in mind, your original image must be a minimum of that size or it will not get a thumbnail created. So you may need a larger original image.
The image size is Dimensions: 550 × 362 just short of the size you suggest. Normally those image sizes that you can select, resize the image to that size and the plugin is not doing that.
Sorry, I had this work on another site,http://www.robhansonteam.com/ with the same settings as you suggested about and it worked. For some odd reason it does not want to work on this site.

I resized the image to be 600×395 which is larger and set it to the listing size option and it is still the large image. I want to look like the example on the curb appeal site.

You can’t just resize the original image through the WP admin. Upload a new image with a size larger than 560×380. That’s all you need to do to look like the example. Just follow the instructions.
I did that, I added a new image that I resized. I did not resize it WP.
Congratulations! Now you need to use the Featured Listings Scroller widget instead of the WP Listings widget as explained in the theme documentation (http://docs.aethemes.com/themes/curb-appeal-evolved/curb-appeal-evolved-home-page/). You also should add more than one listing. With only one listing, it scales up to fill the container. If you want it like the example, you should have 4, but a minimum of 2 would look decent and not be scaled up so large.
Now it looks correct.
