 * Hi,
 * Could someone tell me how one would extract the latest 5 posts from a category
   and display them as a list format on another website? I would like to list the
   latest posts from a category on my blog to my website?

 * The easiest method may be to use an RSS feed from your blog and display that 
   feed on your website. I would read through these topics on the WordPress Codex
   concerning RSS Feeds:

 * Hi Nex2Nun,
 * This sounds like exactly what I need, but how would I only pull the latest entries
   from a selected category via the rss feed? Because after looking over the pages
   you sent, it seems that this method extracts all the latest posts over the whole
   blog.
 * I just want to display the latest posts from one category on our website.

 * By customizing the template within your RSS pages you could specify the feed 
   to display only posts within a certain category. However, the quickest way may
   be to use a third-party plugin. This one here looks like it may be of some help:
