With only products being included in the Relevanssi index, which filter could be used to exclude the product descriptions long and short from any content being indexed.

So that search keywords would not include any content on product posts but only on the product posts titles?

Here’s how you disable the post content when indexing: https://www.relevanssi.com/knowledge-base/relevanssi-index-content/

At least in WooCommerce the short description is the excerpt, you can adjust that from Relevanssi indexing settings.
