Yes, there are ways to exclude images. Look in the “Can I make an exceptions for some images?” section in the FAQ
I have created an issue for looking into Slider revolution compatibility – here. However, I’m currently occupied with a new major release of WebP Convert (the library which WebP Express uses for converting the webp images) – so it may take a while till I get around looking into it.

All in wp content htaccss. above # BEGIN WebP Express and below
