Thanks for trying to elaborate but I’m not sure if I understood the requirement. Do you mean to say you want to exclude one subcategory and display all the others? An example would be very helpful. Yupp, you got it! This is what I need. And I need it to be working as a Gutenberg block. So, a workaround just for the Shop page would not be suitable.

Thanks for the clarification.
That is currently not possible with the blocks provided with WooCommerce or WooCommerce Blocks, but I can see how that would be useful when you have a lot of categories – you could have the option to select all and then deselect the ones you don’t want.
