In some blocks I doesn’t use all the fields. For example I do not use “hotline” in the contact block so I leave that field empty. But after saving and refreshing the page the default value comes back again. * For me it seems this occurs after the update to version 1.1.1 or 1.1.2. Actually it was a feature we intended for developers. But seems like it needs improvement. And it works for a lot of fields.
