Thanks for the reply. But this is just documentation on the regular setup, right?
I am fairly positive I have configured this correctly (have done it numerous times).
The PROBLEM is (and I have never seen it happen before) is that after setting it up (using other smtp as it’s an office 365 setup) every notification from this wordpress site (including the TEST email) is GOING to the email we are USING in the smtp settings. Not to the “to” email.
That means, every notice from wordfence, etc.
Nothing is going TO where the emails should go. The test email (set to go to a separate email) doesn’t go there, it goes to the smtp email. The contact form emails are not going to their designated email, they are going TO the SMTP settings email address.
Any other ideas? Thanks!

That’s a from name replacement issue.
Our issue, and it may be due to 365, is that the emails are NOT being sent to the designated email – they are just being sent to the email used in the SMTP settings.
Does that make sense?
Ok, I was able to get this to work properly using gmail setup I have used with other accounts.
HOWEVER, with 365, the emails send, but again, ALL notifications go to the email used in the 365 setup. That means, any site notifications (like from wordfence) go to that 365 email, instead of to the email listed in the overall wordpress admin area.
So it appears there’s a weird office 365 thing that redirects all mail to that email address, instead of going to where forms and notices should go.
Any other advice?
