If you are gathering the user’s email address in [your-email], for example, just put [your-email] in the to field on the Mail tab of the form.

You can send to as many people as you like. You can comma separate email addresses. It is better to cc or bcc to yourself though. For that, add the cc or bcc parameters to additional mail parameters field.
