Email issue (New Order emails)

We are running a very basic ecommerce website. Up until 12/30, emails had been sent normally with no issues. After 12/30, New Order emails are not sent to the admin or the customer.
I added an SMTP plugin to log the emails and New Order emails are not in the log. However, if we refund the order, those emails are received by both the admin and customer and they also show up in the log.
I checked the updates we made on 12/30 and the only plugins that were updated were not related to woocommerce. I am at a loss as to why this isn’t working.
