Just a question, which short code are you using to display?
[product-catalogue] or [insert-products]
Also how is your catalogue set up?
In the product catalogue, I have it set up as 1 category and used sub-categories for sorting major groups.
I work for a video game company and have it set up as:
Video Games
- Coming Soon
- New Releases
- Classic Titles
This allows me to control what is shown first while being able to keep them grouped. I have all of the title in the catalogue so that I can arrange them in any specific order that I would like as well.

My catalogue can be seen here.
I have a category called ‘member models’ and a number of sub categories within this: Aircraft, SciFi, Military Vehicles.
The shortcode i use is:
[product-catalogue id=’6′ starting_layout=’detail’ excluded_layouts=’Thumbnail, List’]
My process is so create a post, then create a product in the catalogue which can then be assigned to the category of: Member models and the sub category of: Military Vehicles (as an example)
Previously when adding products they would display at the end of the list (on the last page of the catalogue) however more recently they have begun displayed in random order.
Do give an example my latest product (1:72 Sd.Kfz. 164 Nashorn) is displaying as product 21 in a list of 30.

It seems that you have a similar set-up to how I have mine set. Where did you include your products? I have mine set-up with all the products in the catalogue.
So in the site that I am working on all the products are shown in my video games catalogue and I have been moving them to arrange the order. Since I don’t have enough products right now (this is only a test site) to tell you how to move them from one page to another, I couldn’t tell you how to do it. I can tell you that if you wanted your latest to be the last one in the catalogue, you could arrange it to the last one by dragging and dropping the item to the last position. If that is not possible then you could delete it from the catalogue and then re-add it to the catalogue which should put it in the last position of the catalogue.
The only reason that I am saying this is that it doesn’t seems to be appearing random is because it is showing up in the same position that you posted which means that you most likely can control the position by rearranging the items in your catalogue. At least that is what I think.
