Editing category_filter

Where can I edit “category_filter” and the text it displays. I can see that “input-search” has a placeholder, and the category_filter works with, I shit you not, the categories you create. But there’s always the top text-bit “Select a category”.
This is the bit I want to edit. Where can I find it?
So far I’ve founds bits of code in functions.php, there’s also “filters.php, category.php and option.php” I fear, however, the text is to be edited somewhere within the backend of WordPress.
