 * How do I edit the contact header for the theme (changing or removing the phonenumber
   and email adress and linking to ( or adding / removing) social media pages from
   the header-bar.
 * Or do I need pro to do some of this?

 * For this go to section setting **(Theme Dashboard >> appearance >> customize 
   >> section heading )** and change email address and contact detail,
 * for change social link go to social link setting **(Theme Dashboard >> appearance
   >> customize >> social link setting)** and change social link
