G’day Josh, that looks OK. Do you have any other NextGEN gallery plugins, e.g. that provide other gallery templates? Can you tell me please which gallery template is showing up (e.g. default)?
Also, do you know if you’ve changed any of the NextGEN Gallery options? If so, please tell me which. I’ve had another run through and can’t find a setting that messes up the gallery, but maybe you’ve found one.
A known bug in NextGEN is that enabling AJAX pagination resets the gallery template to the default template after you pick another page in the gallery, but it still loads the correct gallery on the first page, so it shouldn’t be that; but perhaps check turning that option off just in case!

It appears that the default template is permanently enabled because I can’t change the template no matter what. I also have the scroll gallery downloaded and installed.
I just installed NextGEN Scroll Gallery on a test site with my plugin, and it doesn’t seem to be interfering. I suggest you start by disabling all plugins, switch your theme back to Twenty Eleven, then turn on NextGEN and NextGEN Scroll Gallery to verify that it works OK, then turn on mine. This should help discover whatever is getting in the way of NextGEN’s gallery template selection.
Beyond that, it sounds like you might have a problem with your NextGEN installation. Make sure you are running v1.9.6 of NextGEN.

Would switching themes mean I lose my current pages and such? If so them I can’t do it.

I can’t see any galleries that aren’t using the scroll gallery template.
Switching themes won’t make you lose any page or post content; it might mean some widgets are lost though, so make a note of any widgets you’ve configured. I suggest you do all of this on a test site, now that your real website has gone live.
If you can tell NextGEN to show a gallery using the carousel template, then my plugin should work. If you can’t, then you have a problem that you’ll need to hunt down.

If you can make NextGEN use the carousel template, then there must be a problem with my plugin. If you can’t, then there’s a problem with your installation.

I was able to make the gallery a carousel, no problem.
Are you able to test with Twenty Eleven theme, to see whether it’s something your theme is doing?
Can you see any errors in your website’s server logs?
