It will be used to show a list of activities on a shift.
How can I display a list with times between 11:00 AM and 03:00 AM and another between 11:00 PM and 1:00 PM?

As for your question about recurring events, unfortunately, Repeat until option is mandatory. However, you can set it to date in 2020 or 2025.
Could you please give this a try? Hope this kind of configuration is not a problem for you.

I really will have problem. I was using Spider Calendar WD and it has this possibility. 🙁
So, Event Calendar WD won´t have use for me. The calendar will have a lot of events. It will be hard to manage.

Unfortunately, Spider Calendar requires specifying Repeat Until too, to avoid possible errors. Won’t a date in 2025 work for you?
As for your second question, could you please mention where would you like it to set as default? Is it the date picker of Repeat Until option?

In Repeat option. If I don´t select any date then the plugin set for example 12/31/2025.

Unfortunately, it is not possible to set a default date. However, you can simply copy the following into the input of Repeat Until option:
2035/12/31
instead of using the date picker. That will also set the necessary date. Just make sure to keep the same format as in the example.

Unfortunately, the only way to have event activities on a shift is to create identical events for each of them.
Event Calendar WD does not provide a feature which will allow choosing two or more time periods. Hope this is not a problem for you.
