I’m loking for a search solution to implement on a WP site with 7000+ post (pages, custom post) and hundreds of taxonomy terms. 1000+ post published every year.
Do you think this plugin should work?

Well, 7000 posts is not huge, it’s just big. (70 000 posts starts to be something, and 700 000 posts I’d call huge.)

The biggest site I use Relevanssi on has 7200 posts and gains 600-700 new posts every year. Relevanssi has no problems there.

However, the Relevanssi database table does require over 500 megabytes of space (where wp_posts only requires 70 megabytes). So in our case Relevanssi database takes about 7 times as much space as the posts normally do. This may or may not be a problem, depending on your hosting: on some hosts, there are strict limits to how big the database can be, on some hosts only your total space counts.

On my host, for example, I have a total of 15 gigabytes available, and it doesn’t matter how it’s used, is it the database or files. On the other hand, I’ve seen a host complain when the database takes more than 100 megabytes. In that case, Relevanssi cannot be used on a site with 7000 posts. Ask your host, they should be able to tell you. If that is an issue, then you want a search that is not done on your own server, but is an external service.
