Display Categories (Not Alphabetical)

Is there a way to customize which specific Categories appear first in the listing? What I’m aiming to do is list each item in specific order, however the Alphabetical Sorting isn’t making this easy!! Any help is appreciated; I’ll continue surfing through the Codex as well. Thanks!!
